I would sit down with costings, and speeds.
I think that I have seen, somewhere, that larger SSDs have slower transfer speeds, than smaller ones.
Maybe 1 External SSD for each Drive would be a better option.

The only way to get the fasted speeds is use Type-C, so don't worry about it. You don't need an adapter they come with one for Type-C to Type-A and C to C.

You'll certainly by limited by the slowest read or write link in the chain, which is always a spinning drive (be it the source and/or destination), and usually even more-so when USB connected, especially sub-USB3 speeds.
