Tips for Recovering Windows Server Licenses?

I have a client (company) who was merged with another company and I've been hired to merge the two networks. No big deal, establish trust between domains, migrate users over, etc. the usual. My client's company has a much better setup than the other company. They have a hyper-v server with all their servers in VM's and their server has plenty of resources (CPU, RAM, Storage) for growth. So my plan was to eventually move Company B over to my client's infrastructure. So the first step was getting a hold of their licensing info so I can spin up some new VM's and that's where I run into my first snag. 

A previous IT company setup my client's network with a volume licensed copy of Server 2019 and they don't have any of the licensing info. The previous IT Company doesn't exist anymore so I'm all on my own. Any ideas on how I can go about getting the original licensing info for their OS?

Microsoft...they keep records on who purchases a volume license...along with the license ID data.

Disk2VHD might be your friend. You'll still have the licensing as part of the virtualized server and can use that until you need to upgrade/replace it.

Yeah, but I doubt they have any avenue to share that data or would be willing. And a call to Microsoft is likely to be 4 hours long, and include being bounced from department until department. At least, that's been my experience, although I haven't been in a corporate setting in a long, long time.
